Its history dates back to the 18th century, when the monks at the Jerónimos Monastery in Lisbon first made this famous custard tart. The pastry consists of crisp puff pastry and a soft vanilla custard made from egg yolks, milk and sugar. Its distinctive flavour is often enhanced by a pinch of cinnamon and lemon zest. A freshly baked Pastel de Nata is golden brown on the outside and silky smooth on the inside.
